What would be a good recommendation of backup software to backup my 12" PB to an external firewire HD?

It's the next best thing to having a shadow/mirror set. That can give you a complete bootable drive ready to go if anything bad happens. Since under the hood it's plain old file copying, you don't need a special utility to recover files, just drag 'em back over.
