My lovely wife got me an 8gb iPod touch yesterday but upon syncing I quickly found out it had the latest firmware on it. Is there any chance of me jailbreaking the little thing, if so, how?

Actually, it is possible for the 8GB. You can downgrade using the 2G 3.1.2 firmware, if I'm not mistaken. This is because the "3G" 8GB is essentially the same as the 2G.
