iPod mini Icon Silver with X Sign?

You can't. The color of the icon is in the firmware of the Mini. Well, maybe you can flash the firmware from a different color Mini.
 
if all you want to do is change the icon on your desktop (which im guessing is what you are asking) i think it can be changed like any other icon, at least it worked for my 3rd gen iPod... although it will only show up to what you change it to on your computer
 
Here's a pic. Also, it's a green iPod Mini, not silver, so I have no idea why it shows silver on the screen
