Maybe you hit a bird or something?

A bird? You mean inside the game? If so, then no! It happens with other flight games, or other games that play horizontiley.

How do you know that you have it completely horizontal? (Just because you put your Touch on a completely flat surface, does not make it horizontal!) Also, does the flight simulator have some kind of calibration setting that you can adjust?

Idk about the calabration thing, but it happened with both simulators.

If you are flying a small prop plane you will need to adjust the trim tabs to compensate for the prop torque.

Maybe all the passengers are looking out the windows on one side of the airplane?
