I'm not talking about while editing, I mean on set while shooting with a video camera. Is there a way to use the iMac as a field monitor?

What outputs does your camera have? I think it's possible but you need an adapter

If it is NTSC then there are USB video input things.
If it is HDMI then you can use a $150 adapter if you can set the camera for 720p.

my camera is the HPX170 and has component and HDSDI.
I also plan on using a small 9" monitor for the cinematographer near the camera. his camera and that small monitor have HDMI. can I bi-link the iMac to the 9" monitor with the HDMI?
