I can't find the option to get rid of them. The first two, arrows and the dot. I only have 'Attachments', 'Date Received' and 'From' selected under 'View > Columns'.

Can you remove these two columns in Apple Mail?

The arrows are used if you organize your mail by thread. If you stop organizing by thread (View > "Organize By Thread"), they'll disappear.
The dot, I don't think you can get rid of. It's used to mark read/unread status.
