"Wiretap" by Ambrosia software is good and they will soon be releasing "WireTap Pro" with all the features you could want.

This may be overkill, but iMovie can also be used to record audio.

not free, but if you already have Office 2004 dont forget that Word in Notebook mode can record

if you wanna pay for a decent app, i have audio hijack pro... audio hijack will do it for like $16 plus record from any application you want.

I think Audio Recorder will do what you want, it can even go strait to mp3, and I believe it is free.
