Yes, of course you can. That's the reason of dual outputs

But you can only connect 2 monitors of the same kind if they have DVI-inputs.
There is no HDMI-2-VGA adapter - at least without expensive signal converting.

yes you can have 2 displays according to your setup:
vga display: use mini-dp to vga adapter
hdmi display: use hdmi port

if you need dvi, then either an hdmi-to-dvi or minidp-to-dvi adapter will work.

Also, the new machines come with an hdmi to dvi adapter in the box.

The two VGA monitors I currently have will not readily plug into the new mini, unlike the earlier version without the HDMI. The only way I can figure to do this is to run a USB external video card to VGA monitor #1 and the DVI-to-VGA for monitor # 2. Looks like Apple is betting on larger displays vs 2 monitors and a shift to connecting TVs. Makes sense, but it would be nice for them to say something when they make that kind of change. Best I can tell from their literature they have said nada. And it sure stumped the tech at the Apple store.

Saying a Mac Mini won't work with a VGA is like asking for a USB to parallel/serial port adapter.
