Was about to purchase some new RAM sticks for my macbook, but it struck me that installing it myself might invalidate my warranty. I have an apple care protection plan which lasts for another 18 months, so will I still be covered if I put in the sticks myself?

It won't void your warranty. But make sure you put the ORIGINAL apple parts back in if you ever take it in for repair. Apple won't help you if 3rd party components are broken.
