My iPhone is showing that I need to update it by displaying the number 1 in a red circle on my "Settings" icon.

Is there a way to turn this off / disable it?

Here is the solution.

Yes, there is absolutely a solution. I had the same annoying problem and I've read many post that stated that even after the update the badge still remained. But I found a solution through Cydia. Search for and install noOTA badge in Cydia. Complete instructions here.

Probably not a good suggestion, but you could move it to another page that you don't see as often so it doesn't bother you as much.
