I purchased a maxed out MBP, but am finding I am not moving it around as much as I thought. I am thinking of exchanging it for a 27" iMac i7, 16gb, 680.
Besides the drive option, wil I regret a non retina screen now that I own the MBP?

Fusion doesn't have anything to do with it. It's the size of the drive. The 1TB fusion or non-fusion will work with bootcamp. The 3TB fusion or non-fusion will not.
People are getting too fixated on the Retina Display. It's best suited for the Macbooks because it helps increase screen real estate and improves the ability to read text which is one of the reasons that the 17" was discontinued.
The iMac has a 2560X1600 resolution display. You'll be more than satisfied. If you need more verification then you should go to your nearest Apple store or Best Buy and see for yourself.
