I want to jailbreak and also update but don't want too if it'll muck up me being able to JB

Anybody know?

You will be able to JB on any of the following fimrware versions:
6.0 6.0.1 6.0.2 and 6.1
Best bet would be to restore with itunes to the latest 6.1 firmware and then JB it.

I updated to 6.1 OTA I'm not really concerned. It's more of a precaution to restore than a must.

I can always restore as new if I need to.

But if you are jail broken and you need to restore, you can't, if 6.1 isn't being signed anymore. You need to have restored with iTunes and not OTA, but if you're not going to jailbreak your phone then it doesn't matter. Update away. :)
