Is there a way to "select all" mail instead of using "edit", then selecting one mail at a time. I have tons of mail to delete and one at a time is a real pain.

I don't think so except for the Trash. I normally login to the web interface (in my case MobileMe) on my computer and then clean up my mail and let it sync to my phone since I am on the computer quite often.

I agree. Would be nice to be able to select all, especially after you've sync'd with your desktop and already read through your emails there.
