Where or in what menu do I set up my new Air (my 1st Mac) to run with the clamshell closed, with an external display, keyboard and trackpad?

There is no configuration needed. Just plug your stuff, close the lid, then wake the computer up by either using the mouse or keyboard.

If nothing appears on the external monitor (rare case), open back your lid and press Alt+F1 on your MBA keyboard, then click "Detect monitors". Try again and it should work.

I'm not sure if it's on by default or not but there is a checkbox under the Bluetooth advanced settings to allow bluetooth devices to wake the computer which needs to be checked.
