Cons:
-Weddings are terribly un-fun events to attend when you're not a guest. And if you're doing both the shooting and editing that means you get to sit through it more than once.
The most true statement ever.

...of course make sure that your cameras do timecode or you'll probably just cry on import and go to bed (I lost timecode on a 3 camera shoot once and was up for 30hours straight...not cool)...
Which NLE? Most decent NLEs these days can do multi-cam well and FCPX is wicked at audio matching.
All I can say is that I applaud you wedding heads.
I tell you its not fun and not rewarding.
I will get the occasional from close friends and colleagues and I respectfully decline (well usually I give a maniacal laugh then say NO!!).
My Scarlet was the target for awhile there to match that Slo-Mo video that went viral.
I put the kibosh to that when I stated three things:
1. Production Insurance cover no less than 50K
2. Hire me as a DIT/Tech to deal with the idiots that man handle the camera so they can see them selves after a shot
3. The cost of post would be no less than 100 per hour
Sure I want to make money but not like that sorry.
Again I give the dedicated wedding guys full respect for putting up with that kind of stress.
