I tried swapping out several different displays. Different video cables. Different connections (HDMI -vs- mini-displayport, and thunderbolt). No joy.
I left the Mini with the geniuses at the Apple Store for a week. Pretty sure the bastards never even looked at it.
It wasn't until I was on my way to the Apple Store to drop-off the Mini that it occurred to me that it might be the RAM. So I wound up waiting that week before I could start testing that theory.
When I contacted OWC with my findings, they initially offered to try and reproduce the problem in their lab. After 3wks of nothing heard, I contacted them and found that they had been unable to even ATTEMPT to replicate my configuration because they couldn't locate either current-generation Apple Display...(neither a Thunderbolt Display nor the LED Cinema Display w/mini-displayport). Pretty hard to believe...
They finally offered to let me return the incompatible RAM, minus a 15% restocking fee.
This Late 2012 Mini replaced a 2006 Mac Pro 1,1 w/16GB of RAM. The Mini just wasn't very usable ("random" irrecoverable black screen at always the worst possible time) with that incompatible 16GB (8+8) OWC RAM, so I had been limping along with 4GB (2+2), 6GB (4+2), 10GB (8+2).
It's just sooooo nice to have the Mini actually stable with 16GB of RAM after nearly 3-months!
FYI -- no black screens with the OEM 2+2GB RAM, nor 2GB OEM + 4GB laptop RAM I had laying around, or when I paired an OEM 2GB with one of the OWC 8GB sticks. The OWC 8G didn't play nice with the 4GB though, so I couldn't do 12GB. And of course the problem would immediately show up with 2x 8GB OWC sticks.
