You use the Script Editor. It's in /Applications/AppleScript/.

Beyond that it's up to you! I find AppleScript: The Definitive Guide to be very helpful and is a good resource learning how to write code in AppleScript.

Apart from that, when you feel comfortable, you can get involved with Applescript studio, which will allow you to access many functions and cocoa UI's using applescript handlers.

You will see that it isn't as hard as it seems the first time you look at it...

I agree with that. I had the older O'Reilly book and it wasn't bad but the new book is so much more. Also, Danny Goodman's AppleScript book (no, I don't remember the name) is worthwhile on another level, which is as much psychological as well as great scripting.
