macbook came with 3 discs: apps/iLife, grey os x install, and snow leopard. I erased, etc from grey os x . Should I have used the snow leopard instead? or simply install snow leopard after the grey os x . the macbook is about one year old.

If you want it to run Snow Leopard, then use the Snow Leopard disc. The grey install disc is likely Leopard
 
Ugh, the grey disc is already almost installed. Yes, I want snow...should I remove the grey os x/uninstall it or can I install snow over top of it?

You can install Mac OS X 10.6 Snow Leopard as an update, thus it installs itself over Leopard.

Btw, the Snow Leopard Upgrade DVD is a Retail version of Mac OS X 10.6, thus no need for Mac OS X 10.5 to be on the machine.
