I am currently moving our small business from using an externally hosted POP-based email service, to IMAP on our internal OS X Server.

However, as we can't guarantee uptime of this server, I'd like to use the current POP service as a backup using a secondary MX record. We did the same with a Windows-based mail server at my last company, whereby the internal server would periodically check the POP service for new mail in case any had been directed there.

Is this something that can be set up with OS X server? Or is there a different method we should/could be using?
