What does it mean when it says it has 2 stops of IS? I know what a stop is in terms of exposure, but I don't get what it means with IS.

Basically what it means is that you should be able to shoot (handheld) at a shutter speed that is two stops slower than you would normally get a sharp photo at. So, say that the slowest you can usually get a sharp photo at is 1/320 second, with 2 stop IS you should be able to get a sharp photo at 1/80 second.
