I'm running 4.2 and I have to return/exchange my phone in for another one today and would like to restore it back to 4.1 software. I tried just hitting the RESTORE button within iTunes and it didn't work.

hit option and click restore at the same time. Select the 4.1 software and restore.. then your iPhone will be stuck in recovery mode so use recboot or tiny umbrella to kick it out!
 
Oh, I don't have a copy of the 4.1 software. I guess I'll need to find it.

Do what the guy above me said. To download the 4.1 firmware, you can use this website.

Edit: Looks like Maclvr beat me to it.
