So, I sometimes keep Console open so I can look at my firewall logs, but is there anything I can get on a Mac which is good for intrusion detection, so it alerts me of any unexpected inbound traffic to any port, even if the firewall doesn't block it?

Little Snitch will alert you to outbound connections, but I don't know of anything that alerts you to inbound connections. If your firewall is on, nothing should be able to penetrate, unless you allow it.
