I'm a student mostly browsing / streaming / writing in documents but really like to get the most out of the computer. What kind of difference will I see if I go from 4 GB to 2 x 4 GB RAM?

Launch Activity Monitor and click the System Memory tab at the bottom to check your page outs. Page outs are cumulative since your last restart, so the best way to check is to restart your computer and track page outs under your normal workload (the apps, browser pages and documents you normally would have open). If your page outs are significant (say 1GB or more) under normal use, you may benefit from more RAM.

Chances are very good that you can do everything you described without ever maxing out 4GB of RAM.

Page ins are irrelevant, as you'll always have those. As I said, page outs are cumulative since your last restart. If you've been operating with your normal workload since your last restart, you're not paging much at all, which means you won't see any benefit from adding RAM.
