I just bought a new 250GB Hard drive, prepping it for sale due to the last hard drive crashing. i installed it correctly, popped in the snow leopard cd and it can not find a disk to install it on.
 
That's very helpful, but the thing is that it does't recognize it at all.

It is not recognised in Disk Utility?
What exact MBP do you have?

And do you have an external enclosure/dock for 2.5" S-ATA HDDs, where you could put the new HDD into to see, if it works from there, to eliminate the HDD as problem?

simsaladimbamba is right, boot to the install DVD then go to Disc Utility. If you don't see the drive there as available to be formatted you have a larger issue.

OSX won't offer to install until it sees a properly formatted drive available, and that's not going to happen until you get into disc utility and do it.
