Hi, I just got my uncle's old iphone form him so I can take it with me to another country. I got it unlocked, but realized when I got home that I hadn't yet set it up as a new iphone, meaning it is still under his account. I can't purchase apps in my itunes account, etc. If i set up as a new phone, will this undo the unlock?

Yes, it will kill the unlock.
If you want to set up as new, you have to create custom firmware.
