My favorite thing about JailBreaking is being able to remove the icon labels. I searched Cydia but I cannot find something to remove them on 5.0.1. Does anyone know of a tweak that will allow me to remove them?

I would say use Springtomize 2 also, apart from it doing what you asked for, it has tons of other cool customisable features!
