Is it possible to record everything thats going on when you use a ipad - like a apple keynote where presses etc are registered on the big screen - essentially like a screen recorder that would enable you to record the ipad on a computer?

If you're jailbroken then there is something called Display Recorder that will allow you to record your screen.
Otherwise, if you find a way to mirror or iPad screen on a PC, then you can record your PC screen and thus have a recording of your iPad screen. I've managed to get this to work with the new iPad and an HDMI cable from an adapter in the iPad, going into a PC.
