Yoyu can define what app opens what kind of files in the Finder.
For example, select a .mov video in the Finder, then Get Info (command+i), there is a pop up selection Open with:
There you select the App you want to use to open that particular file, and if you click in Change All... it will change all the files with the same extension to open by default with the app you chosen.
