Right now when the iPhone takes a pic, we get a 3:2 ratio for the photo. I'm guessing those days would be gone if we get a 16:9 screen, correct?

The S3 and the One X both take widescreen pics so I'm sure it will be the same on the new iPhone. What really gets me is that all my pics taken with previous iPhones will have the black bars on the sides when viewed on the iPhone 5. Also if you have an ipad all the pictures you take with the new iPhone will have black bars at the top and bottom when viewed on the iPad. That’s the main reason I was hoping the new iPhone would not go to a widescreen aspect ratio.

On the Razr Maxx (which is a 960x540 or 16:9 display) you have the option to choose either widescreen (16:9) or non-widescreen photos.

Current video aspect ratio on the iPhone is 16:9 despite being a 3:2 screen. If you double tap the display, it will pan out to show the entire video.

Video Records on the iPhone in 16x9, right now, even with a 3:2 screen.

I am sure that pictures are probably going to keep the same ratio, mainly because a 16x9 picture to me, would be more closer to a panorama shot, which one doesn't exactly need all the time.
