Would they have the maxed out model available? I'm looking to replace my retina and get a 2.7 ghz 8 gb and 512 ssd with hi-res screen.

They don't have any customised models in store, you need to order them online.
 
The stores don't sell these models so how you got hold of one I don't know, anyway it seems you already know the answer to your question so why post?

Yes, they do. They are pretty rare though.

The above comment was correct. Customized models are only available online. Apple does generally carry the base models and a top spec model however.

In store hi-res would likely be 2.7, 8GB, 750GB 7200RPM drive. Apple does not do SSD in store for the standard MBP.

Actually, stores do stock the 15" cMBP in the 2.7GHz/8GB/1TB 5400/Hi-Res Antiglare configuration. I bought one from the Fifth Avenue store last week. Local stock may vary, but they usually carry the two base models, then an 'ultimate' configuration. I'm not sure if they have a 'Hi-Res glossy' version of the model above, but it stands to reason they should.

Mine had to be BTO. it's a 2012 MBP 15" Hi res antiglare display, and 7200 rpm HDD

yeah some stores will get in models they shouldn't have (either floor models that they sold before going out or a BTO that was never picked up or opened) but they are only supposed to carry the two base models.

I'm not sure about anywhere else, but in NYC (Manhattan, specifically) most if not all of the Apple stores I've checked out here carried that Ultimate/Antiglare config. According to them it's their least popular model in terms of sales quantities, but they all had a few in the back.

There is a lot of 'Apple Arrogance' going on here.

When someone is wrong, I call them on it, that is what is going on here.

To the OP directly, can you get the config you want directly in store? No. Can you get a higher end config then the base models? Yes, if it is in stock. And Apple does stock higher end configurations (like the top spec Retina). There is nothing random about it at all.

The Apple store I shop at has these two cMBPs :

1) 2.7 i7
1 TB 5400 RPM HDD

Both MBPs are High Resolution with AG


Also, I got my ultimate rMBP from the store. They had about 6, per the manager!!
