Oh, and [I know what I'm about to say will drive GGJstudios crazy] but don't think that Snow Leopard is now as secure as Lion or ML because of this Security Update.

That's why I asked. I wasn't aware of anyone using plug-ins with Mail.GGJstudios: If you have to ask, you're not affected, so no worries
I'm using plug-ins called WideMail and Mail.appetizer.
But regardless of what those specific plug-ins are, all plug-ins have been disabled.
Mail.appetizer enables a preview pane of new emails. Much like Growl except only for Mail.app.
