I'm running 10.6.8, and for example, I would like certain video formats like .mp4 to automatically open with QuickTime instead of a different app that is currently the default. The OS has a feature for this... you right click the file, "Open With", then click "Other". I can choose what app I want to be the new default and check the box "Always Open With". But the catch is that is never saves it. The very next time I double click that newly applied 'open with new default app' file it goes to the old one and I cannot no matter how many times I try actually save my new selection via the official process. Pretty frustrating. And I'm not a big fan of Lion or Mountain Lion... anybody have a solution in Snow Leopard?
 
Have you tried the alternate method? Right-click on a file and Get Info. Select your app under Open With, then click Change All. The method you described only works for that particular file, as opposed to all files of that type.
