I have the rMBP 512SSD with 16GB RAM and am wondering how many desktops (each with a full screen app) I can safely run at the same time.

I have about 7 desktops open, including one with Photoshop (which has allocated itself 10GB RAM).

I've not noticed any performance slow-down, but I'm just wondering how much one can safely throw at the machine.
 
I have a similar config on my 2011 MPB, run 7 VMs which consume 13.5 of my 16 gig of ram and the system still screams. Use Activity Monitor to see how your system is behaving.
 
You won't see a slowdown until you exhaust your available RAM. Even then the disk swapping will be better because of the SSD but you will probably notice it. It really doesn't matter the number of the apps, it's how many resources they consume.
