why can't i noticed a difference

You're sitting further away from the iMac compared to the retina MacBook Pro, so it's a bit harder to discern the difference between.

If it's a late 2012 or newer iMac, the difference is very close. The 27s are really good. Agree, the current Air is an average panel.
