Voice commands (amateur user)

Hello,
I've recently started using, turned on, voice dictation in preferences, and used the voice commands.

when researching this feature, finding alot of sites that say you can, for example "start screensaver" or "tell me a joke"

these commands i can't seem to find, have they been removed in Yosemite?

thier was also an option or checkbox calked 'speakable items' which i can't seem to locate in yosemite;

and also an option to turn off the shortcut key, so that the mic is 'continuously listening' / this option i also can't find :/
