Title says it all.
The white one.
It's got dual SATA bay (just need to swap in an optibay caddy in place of the superdrive) and upgradeable RAM (up to 8GB).
Honestly I prefer having an upgradeable machine.

Thoughts?

Is there a way I can find a new in the box one?

May be a parody, but there are plenty of applications where a 2009 mini will do just fine, and they are cheaper than new ones. (I own 3 that are chugging along now).

I write from a 2010 (last one with superdrive) with 16GB ram and 1TB SSD, still usable but the 2.4Ghz Core2Duo shows its age in multitasking.

What I find weird is people hoarding old models even when they have no reason too (if not psychological), skewed by the buzz about non-upgreadability.

It isn't THAT obvious that you're just kidding, and that says a lot about the 2014 Mini(s). (Hey, I can live with USB 2.0 and SATA II if I've got a looker.)
