A new Mac is on the way, but I'm not sure the best approach for setting it up. Assume HD space is not an issue.
Two people will be using it with very different Apps and separate iTunes accounts. (Multiple iPads, iTouchs and iPhones)
Should I setup two accounts and therefore have two of everything - environments based on personal preferences?
-OR-
One account with two iTunes directories? The issue with this is I can't wrap my head around the Apps usage. Will I have issues with Apps not working because the iTunes account purchased it? Will the Home Sharing capability really work?

Your thoughts are appreciated.
Thank you.

I would set up two user accounts and use Fast User Switching. If you each leave a copy of iTunes running, then Home Sharing will make everything available to everyone. In this situation each user would have his or her set of apps since each has their own iTunes account (it sounds like this will be the case regardless). I do not know if Family Sharing applies to your situation.
