As I understand it for an SSD to perform well over time it's lifespan it needs 2 things, TRIM enabled and to be over provisioned. I believe Apple have been enabling TRIM in select drives since 10.6.8. If I bought a new iMac with flash storage today would they also over provision the drive and leave some space unallocated or would I need to do that myself?

I have a mid 2011 iMac with a spinning hdd for reference!

No, you don't need to do it yourself. Apple take care of this.
 
Out of interest, my 768gb SSD in the MBP has been my main drive for over two years and 4 OSX versions, never more that 10% free space and still the same speed as ever with no management required.
