Is there such a workflow? I suspect there is but as I'm brand new to Automator I'm having trouble working it out. Can anyone help? Thanks.

The answer to the question is there such a workflow is most likely no unless someone had the exact same requirements as you do. You usually make the workflow yourself catered to your needs. Please provide more information as to what kind of file you want to save and from which application.

I essentially want to recreate what an app called ForeverSave2 (which seems to have quit working) does for me:

Every five or ten minutes, save a copy of whatever document I'm working on to a backup folder so if I have a crash or have forgotten to hit command + s, I don't lose all the work I've done of the doc.
