So maybe someone already came up with this but it seems like everyone online has been sharing the idea of making a "stack" with a smart folder that you put in your dock.
I tried this and just found it annoying because you'd get ALL the pictures on your computer in the folder, or if you set it to only show todays then i don't think it'll store the ones from the day you started doing this and on... Also, it's kinda slow because the computer has to search for all these files, plus you don't get the organization like you do with my way.

SOOOO, if you want a Stack that'll store what is downloaded from safari and ichat, just like the default Stack that comes in the leopard dock, all you have to do is create a folder that says Downloads or some other clever name you come up with (Clownloads?) then drag that into the dock. Then set ichat and safari to download files to that folder.
But wait, it gets better.
If you get this nifty plugin called SafariStand (free), you can tell safari to create a dated folder of that day's downloads. This keeps things more organized than Stacks does (at least with my limited knowledge of leopard) because then you have subfolders that are dated! I also created an iChat folder so iChat and safari files don't get mixed up in the all inclusive downloads folder.
If you do it my way, your stack will look something like this:
the dated folder is the folder dedicated to downloads from safari, and a new one is created automatically every day (unless you don't download anything that day) and the ichat folder is obviously for ichat OR ADIUM
