Generally speaking, you can just rename the directory that contains the application, BUT...this WILL NOT always work! In fact, after playing around with this, I found that Installer.app will not work unless it is named Installer.app. This is also true for several other applications. Likely, this is because the internal configuration and workings of the application are expecting files to be in specific directories, so renaming will break it. Some applications will still work when their directory is renamed, but some will not.
Also, don't forget that should you ever decide to upgrade the application, if the original directory is renamed, the upgrade will likely break.
So, the only complete solution would be to have renaming incorporated into SpringBoard/SummerBoard. I don't know if Apple or the SummerBoard develoeprs will ever incorporate that.
For those instances where renaming does work, while I cannot speak to the Mac platform, on Windows, you can generally change an application's displayed name by doing the following:
- Fire up any of a number of file transfer applications like WinSCP or FileZilla
- Connect using port 22
- Navigate to the Applications Directory
- Rename the directory
- Restart Springboard
