I have posted this link in a couple other threads about upgrading Mac Pro processors, but this page details every processor in the Xeon 5000 chip line-up. Included are the 65nm and the new 45nm chips.
NOTE: The 5100, 5300 and 5400 series are the only ones in the series compatible with Mac Pros (Woodcrest, Clovertown, Harpertown respectively). The Wolfdale and Tigerton Chips (50xx and 52xx) are not compatible with the Mac Pro, or so far that I know at least.

It's a good read. You can learn alot about the Xeon 5000 series line-up by looking at the chips on that page, and get the model numbers to look them up on eBay, newegg, etc. You will notice that 3.0GHz is the fastest Woodcrest, and Clovertown...and 3.2GHz is the fastest Harpertown chip.
