I am missing apps like iPhoto and the program to record videos. What is going on?

Load Disc 1 of your system DVD to the desktop, open the disc and there should be a "Install Bundled Software" icon which has all the additional stuff..

However, if it's a retail copy of Leopard you won't find iPhoto on there as it's part of iLife.

So, if I wanted iPhoto and the program to record videos back on I'd need to load the disc that I originally got with my MacBook?

Those apps are free on the restore disks that came with the computer. Because they were free when you bought the computer, a Leopard or Tiger store bought disk won't have them, you are just buying the OS.
