Just re-jailbreak. The first time I did this, I must have done something wrong, but I just re-jailbroke to 1.1.3 and installed Summerboard, and instead of a blank grey page when you hit the "Themes" button.
Anyway, re-jailbreaking has gotten me the list of themes!! I'd just like to let people know because I've seen at least a dozen comments both on here and in Youtube video comments about this problem. It may be a bit of a tedious process, but re-jailbreaking will get your Summerboard working.
