Hi, I went through the trouble of reverting / restoring my 1.1.3 -> 1.1.1, and then continuing on to "jailbreakme" to jail break my ipod. My experience is and with windows, as well as my OS of choice and use. (Which is why research on this is difficult for me).

I received the "installer" icon on my Ipod touch after doing such. Primarily I am after a sort of CMD program / built in telnet (like Windows has) to interact with the network I am connected to (Where I could run "ipconfig" commands for example). So far I have installed the following programs:

System > BSD Subsystem V 2.1; Installer; OpenSSH; Term-vt100
Sources > Community Sources
Network > Dns Tools
Themes > Black Wood

Though I have these programs I have no clue how to go about accessing them to use, nor do I understand how to enable the theme I have downloaded. I am new to all this, as you can probably tell, though would like to understand this better (No solid tutorials that I can find, anyway).

to use the theme you need to go to installer then click install and scroll down to system and install summerboard. Exit installer when installed then turn your ipod off then back on again (requirement for summerboard) and then you will see an icon SMB Prefs, go into that and click themes, click on a theme you wish then click on the back arrow in top left corner and scroll down to bottom and click restart springboard and your theme should be installed.

BSD Subsystem - this is not something you need to access its just something required for the likes of summerboard and a few other programs (dont ask me I dont fully understand it lol)

dns tools should have an icon on the home screen for it just a case of pressing on the icon to open it.

community sources - this is just a package that adds sources to installer so that you have more programs to choose from to install

Well, first I suggest you go all the way to a broken 1.1.3 + additional apple apps. More stable and will work better with the current released apps, themes, etc. Besides, you will get the Mail, the "wiggle", plus others. Since you already have the terminal emulator installed (Term vt-100), just start it up and, voila, you will have Telnet & SSH commands at you finger tips. Now you can connect to other clients in the network. Mind that you are in a POSIX shell, but I am confident, you will pick up soon if you need more than just Telnet. Btw, "ipconfig" command equivalent under UNIX will be "ifconfig" - have a guess who copied who ;). Run "ifconfig -a" to see the IP addresses.

You definitely got me on my way :) I had no clue I was looking at what I needed all along.. Lmao. Just have to better familarize myself with the diff. version of commands / POSIX now and I guess I just might be all set.
