I have many mp3's outside of my iTunes library, and I want to listen to these mp3's without iTunes copying them into the library, is this possible? I then would like to them copy the ones I like into the library.

Also, if I add to library, the file is copied into the iTunes folder, is there a way that it can just be linked into the library using the file in it's original location?

Preferences -> Advanced -> Copy files to iTunes Music folder when adding to Library

Uncheck.

If you want to just listen to decide if they are worth keeping in the iTunes Library, you could use "Quicklook" first - just select the songs you want to listen to in Finder and hit the Space bar in Leopard.
