Converting DVD to iTunes... what Settings?

I just bought the latest Toast Titanium (EXCELLENT PRODUCT!).

It will let me convert movies and import them into iTunes. I don't have iTV (or whatever it is called) and I do have an older model iPod Video (60GB). I also like to watch video in iTunes while sitting at my desk.

Is there a setting that will handle all three situations (iPod, iTV, quality videos in iTunes) or do I need two libraries (and convert everything twice), one for iPod and one for everything else?

This should probably be in the iPod forum, but the 5G handles 320x240 H.264 which should look alright fullscreen. It won't be DVD quality obviously.

I thought it could go 640 x 480 or something.
