I want to be able to always open a file with the correct app instead of the default one. When I right click the file and go to other, the menu that comes up has a check box that says "Always Open With", but even checking that doesn't change it permanently. It will open with the correct app that time, but the icon for the file still looks like the default one, and it opens with the default one unless I go through that process every time. Any ideas why??

That's because it will only do that to THAT particular file.

When you use "Change ALL", you are assigning a particular app to open all files of the same type. It's stated clearly on the "Open with" window.

You can also right-click, press option (alt), and then you'll get an "Always Open With" choice. And "Get Info" will turn into "Show Inspector," which is a bit more powerful.
