setting up midi controller's assignable knobs?

i've never really been into midi stuff, mostly just do recording and what not. but i recently decided to try and get some electro/dance stuff composed so i went out and bought a little 25 key midi controller.

it's got 8 assignable knobs, which i presume can be assigned to controls on the plugins i'm using for cutoff filters and stuff. but i have no clue how to do it i read the manual for my midi controller (Carillon Control 25) and searched around logic discussions on apple but can't find anything.

anyone any ideas?
