The more I think about it, the more I want to exchange it for a 16GB. Should I? Could I? I already unlocked/jailbreaked it for use with T-Mobile. Can I just reset it back to pre-activation mode and exchange it for a 16GB? BTW, I bought it from a local Apple store.

Do you really want to pay an extra $40 even if they do accept it back? I don't know if you can reset it and all, but I can tell you that I wouldn't do it because even 16GB wouldn't be enough to fulfill all my needs. I'd just use it for a couple of years and then get a new fancy-dancy model that should hold at least 100GB by that time.

Pwnage is able to restore to completely brand new OTB firmware.
 
Go for it, if 16gb would fulfill ur needs.. worth restocking fee and all.. be careful when virginizing iPhone.
